From the Brand: When our Rye hit four years old, we were pleasantly surprised by the density and clarity this benchmark revealed, with darker chocolates, more acidic dried fruits, and a refreshing solvency. We have become so familiar with the dance we have learned to step in our intense Texas climate, that new plateaus of elegance and balance in our spirits are much appreciated and hard won. Our 100% Rye Mashbill began with 91% Raw Elbon Rye from Northwest Texas accompanied by cara, chocolate and roasted rye. All milled, mashed, fermented, distilled, and matured onsite in Waco, Texas.

About the Distillery: Our custom Forsyth copper pot stills are, as far as we know, the tallest pot stills in the world. Their height and unique helical lyne arm design allows us to create a rich and viscous spirit. We specifically tailor long 7-day fermentation processes for each of our recipes. We coax our yeasts alongside our local microflora to create the sour precursors to rich fruity aromas that will develop during distillation. The climate in the Lone Star State is unique to say the least. The wild daily temperature swings we experience throughout the year at our distillery and barrel warehouses create layers of unique flavor. The summer heat forces the spirit deep within the pores of the oak casks, and the winter months sees that spirit being squeezed out of the oak back into solution. We pair the intense Texas climate with highly customized 225 Liter casks that help facilitate maturation in such a dynamic environment. Each of our whiskies are intentionally matured across a variety of custom toast & char profiles so that a nuanced and complex profile can be achieved.
